Weekly Recipe: Sautéd Apple Slices

Sautéd Apple Slices

2 large apples (any variety, I use Granny Smith)
Juice of half a lemon
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1 Tbsp (or less) olive oil 
Raisins (optional)
Walnuts (optional)

Peel and core the apples, then slice them thinly. Add the oil to the hot pan with the apples and the spices. Cook the apples until they are soft and moist, then add the lemon juice. Sauté a few minutes more until golden.

I usually use lemon juice but I had some homemade orange marmelade and added that. You can also add fruit juice to give it some tang and sweetness. I usually add raisins but I didn't have any this time. If you do add raisins put them in at the same time you add the apples. Sprinkle the nuts over the top once they are done if you decide to use them. 

This dish is versatile. Add any spices you like and any fruit you like. This dish is also good with peaches and pears. 

Some people add sugar but I don't. I'm starting my training next month and am trying to cut back on extra sweets. So I cook these up and I get my fruit quota plus my sweet tooth is satisfied!
